Easy Blueberry Cobbler Recipe

Ingredients for Easy Blueberry Cobbler

Produce

  • 3 cups – Fresh Blueberries
  • 1 – Zest of Lemon

Baking + Spices

  • 1 cup – Flour (all purpose)
  • 1 1/2 tsp –  Baking Powder
  • 1/2 cup – Granulated Sugar
  • 1 tbsp – Sugar
  • Powdered Sugar (for sprinkling)
  • 1/2 tsp – Salt
  • 1 tsp – Vanilla Extract

Dairy

  • 1/2 cup – Unsalted Butter
  • 4 oz – Cream Cheese (cubed into bite size pieces)
  • 3/4 cup – Milk
  • Vanilla Ice Cream

How to Make Blueberry Cobbler

    1. Preheat the oven to 350F.
    2. Brown the butter in a cast iron skillet over medium heat
    3. Pour browned butter into a mixing bowl and let it cool (you can stick in the fridge while you’re on step 4) Also, don’t clean the butter residue off the skillet!
    4. Whisk together the flour, baking powder, and salt in a small bowl and set aside.
    5. Combine the blueberries, lemon zest, and 1 tbsp sugar in another bowl and set aside.
    6. Once the butter has cooled from hot to warm, pour in with the sugar and vanilla and mix to combine.
    7. Mix in half of the dry ingredients, then the milk, and the rest of the dry ingredients. The batter should be the same consistency as pancake batter.
    8. Pour the batter into the same skillet used to brown the butter.
    9. Sprinkle a handful of blueberries on top of the batter along with the bite-sized pieces of cream cheese evenly around the batter.
    10. Top with the remaining blueberries 
    11. Bake for 35-40 minutes.
    12. Let the cobbler cool. 

Feel free to dust the top with some powdered sugar and serve with a couple scoops of vanilla ice cream. Enjoy your delicious and easy blueberry cobbler!
